Tasting note
Light yellow straw yellow, fine and persistent perlage. Complex bouquet with hints of linden blossom, honey, ripe white fruit and bread crust. Rich body with a complex structure, full-bodied and intense, with a lively texture and a very long, mineral aftertaste.
Vinification
Gentle pressing with a yield of only 45%. The wine then remains on the fine yeast for around 6 months using batonnage. The wine is then bottled for a further 6 years of aging before it is degoged and corked without adding a shipping dosage.
