About the wine
Fabien Jouves, in his early thirties, less than 10 vintages in the cellar, is already considered a star. After studying in Bordeaux, he took over the reins at home, switched to biodynamics and went back to a more traditional, fruity-mineral style. The style in Cahors has become Bordeaux-esque in recent years, and the wines have lost their identity. The success was not long in coming; the soils and therefore also the wines got better from year to year.

Tasting note
Fresh and fruity with lots of Malbec spice and a charming rustic touch from Jurancon. Light and lively on the palate for a wine from such southern regions. Yet he has something unbridled wild, typical of his region. Wild herbs, licorice and scorched earth are mixed with the black fruits and cassis. Lots of fun for little money!

Vinification
Fabien's work in the vineyard and in the cellar goes beyond biodynamics. For example, it also injects copper far below the permitted limit. With a lot of hard work, he builds up biodiversity in his vineyards. He is interested in the natural balance - in the soils and in the wines. That's why he doesn't do a green harvest, which he regards as a brutal intervention. The wines are fermented spontaneously, undestemmed, and only minimally sulfurized during bottling.
