About the wine
In Weil am Rhein since 1425, established at the top in Baden for a long time - even though neither the Schneiders nor their wines are loud! Natural viticulture - works even without a label. Spontaneous fermentation, long yeast storage, unfiltered, often unweaved - that too is not announced markedly. Rather, everything here is from the hands of Claus Schneider and his sons of exceptional restraint, refinement, elegance and durability. The Burgundians in the Weiler Schlipf location, THE location in Markgräflerland, are among the best that Germany has to offer when it comes to Burgundy. White as red - wonderful elegance.

Tasting note
Everyday hero. He is not loud, not aggressive, but when it comes down to it, he can do something, is firm, determined. First beautiful, peaceful, benevolent white to yellow ripe, dignified fruit, including pear, yet attentive, resolute, ready for action, the fresh, tart, bright minerality. On the palate, this civil courage in the soft, bright fruit, alert, energetic, tart, mineral, and so accomplished, the delicious, very bright, innocently beautiful fruit returns like relief, happy aftertaste. This is a Weissburgunder with plenty of melting and - instead of acid - great mineral tension. Wonderful!
Culinary recommendation
Flaschenpöstler-Tipp: Weisser Burgunder vom Kalkstein passt ideal zu Pulpo, Tapas und Rauchlachs.
Vinification
Selective reading by hand. Low-temperature fermentation with the vineyard's own yeasts in steel tanks, yeast storage for 10 months, minimal filtration and sulfurization.
