Tasting note
The wine has a beautiful, intense and bright ruby red color. On the nose, floral aromas dominate, in particular violets, which are characteristic of this wine. Other fine notes such as rose jam and wild strawberries can be noticed. On the palate, it has a good structure with fine tannins, a pleasant texture and long-lasting floral and fruity aromas.
Culinary recommendation
The grapes are harvested by hand and, depending on the vintage, 20 to 50% fermented as whole grapes. Fermentation and maceration take place over 2 to 3 weeks in small open vats with regular reassembly and pigeage. The yeasts used are indigenous (natural). After pressing in a vertical press, the wine ages for 14 to 18 months in French oak barrels, of which 20 to 25% are new.
