About the wine
The philosophy of Bodegas Viñátigo is to revive and promote the extensive varietal heritage of the Canary Islands. The journey began in the 1990s on a century-old plot of land in the village of La Guancha in northern Tenerife, where the traditional Marmajuelo and Baboso Negro varieties were vinified in the old family winery. The ethos of Bodegas Viñátigo respects the environment, both in the vineyard, where sustainable viticulture practices are used, and in the construction of the ultra-modern winery, built in 1997 from local materials and designed to use minimal energy consumption.

Tasting note
A cross between the white variety Listán Blanco de Canarias and the red Negramoll. It typically produces red wines with light colors — due to their thin berry skin — and with aromas of black and white pepper, red fruits, fig leaves, and a mineral and smoky character.
Culinary recommendation
Goes well with tapas, grilled meats or paella.
Vinification
On arrival at the wine cellar, the grapes are cooled down so that the use of sulfur can be avoided. Fermentation in stainless steel tanks with local yeasts and temperature control for 12 to 14 days. It is then aged in used French oak barrels for three months.
