Tasting note
Golden amber with bright reflections reminiscent of honey. Intense and enveloping, with notes of dried fruit such as almonds and walnuts, accompanied by nuances of honey, dried figs and a delicate touch of vanilla and sweet spices. Sweet, full and velvety on the palate, with a pleasant freshness that balances the intensity of sweetness. Persistent, with a finish that evokes hints of caramel and roasted almonds. It is a harmonious and complex wine that offers a multi-layered taste experience.
Culinary recommendation
Goes well with desserts based on almonds and dried fruits, such as Tuscan cantucci, marmalade tarts, chocolate desserts and blue cheese. Also ideal as a meditation wine on its own to fully enjoy its complexity and aromatic richness.
Vinification
After harvesting, Trebbiano and Malvasia grapes are dried on racks to concentrate the sugar and flavorings. Fermentation is slow, followed by a long aging in caratelli (small wooden barrels), which contributes to the development of the aromatic complexity typical of Vin Santo.
