The Castellare estate near Castellina, in the heart of the Chianti Classico area, shines with its entire production, from simple Chianti Classico, which is one of the most beautiful in its category, to the Riserva Poggiale, to the I Sodi di San Niccolò, the super selection from the homonymous location, one of the revolutionary reds from the early 80s and has since grown into the great Tuscan classic. Vin Santo is a gimmick and specialty. Late-harvested white grapes (Malvasia and Trebbiano) are hung on wires to dry in a well-ventilated room, protected from direct sunlight and rain. During three to four months, evaporation reduces the volume to a third and the resulting grape juice flows as thick as honey and is just as sweet. The young wine then ferments and matures for about 4 years in small barrels made of various woods and develops a wonderful complexity of aromas combined with a seductive sweetness. Vin Santo is an excellent accompaniment to highly ripe cheeses such as Stilton, Gorgonzola, Bleu de Bresse or Rässem Appenzeller.
