About the wine

The estate was built in the High Middle Ages by the Counts of Chalon-Arlay, princes of Orangehistoire.htm, at the foot of their mighty fortress. It later became the Royal Vineyard of England, Spain and then France. Today, the castle and winery are owned by Comte Alain de Laguiche. The vineyards stretch over 30 ha on rolling hills along the banks of the Bresse and not far from the foothills of the Jura. The vines grow on fossil-rich limestone soil and rich marl. Due to their south-facing slopes, the vines are adequately illuminated by the sun and the hill protects them from the north winds.

Tasting note
Yellow with golden reflections. Complex and complex bouquet with notes of pome fruit, hazelnuts, almonds, mushrooms and dried fruits. The supporting acidity results in a fresh vin jaune with a long-lasting finish and potential for 50+ years.
Vinification
After fermentation, the wine ages in oak barrels for seven years. During this time, up to 40% of the liquid evaporates, which must not be refilled. This cavity in the barrel causes a natural, protective yeast flor to form on the wine. This gives the wine its unmistakable aroma. The bottling takes place in 620ml bottles (this type of bottle is called Clavelin), which is the amount of one liter of wine left over after evaporation during the aging period.
