Tasting note
The wine aged for 75 months with yeast pile in small wooden barrels. The Vin Jaune comes in the typical Clavelin bottle (62cl). The reason for this special format lies in the 'Angel's Share', i.e. the part that evaporates during long storage. The wine tastes like nothing else: golden color, very complex, nutty, aromas of almonds, truffles and curry. Everything is very well balanced due to the nice acidity. Very long finish.
Vinification
Marl and limestone soil, spontaneous fermentation, 6 years and 3 months in wood in contact with air to produce a flour-like yeast.
