Tasting note
Yellow with golden reflections. Strong and persistent nose of dried and candied fruit. On the palate, complex aromas and oxidative notes. With the well-integrated and supportive acidity, the wine ends wonderfully with a long finish.
Vinification
After fermentation, the wine is aged in oak barrels for seven years. During this time, up to 40% of the liquid evaporates, which must not be refilled. This cavity in the barrel creates a natural, protective yeast layer on the wine. This gives the wine its unmistakable aroma. The sound of music during the first maturation improves the quality of the yeast veil and gives the wine more aroma. It is bottled in 620 ml bottles (this bottle shape is called Clavelin), which is the amount left over from one liter of wine after evaporation during the aging period.
