Tasting note
Strong ruby red color with plum tinge. Convincing, full bouquet with fruity scents that combine with notes of vanilla and fine woods. The palate is full, powerful, full-bodied and spicy.
Culinary recommendation
Goes well with tasty first courses, as well as roast beef, pot roast, game and mature cheeses typical of the region.
Vinification
The grapes are pressed and destemmed; the clear must ferments at a temperature of 28-30° C with a maceration of 6-9 days. After tapping and before fermentation is complete, the wine is transferred to 225 liter Allier barrique barrels and 500 liter tonneau barrels, where, depending on the vintage and structure, it matures for about 17-18 months. It is then transferred to stainless steel tanks, where it is aged for another 2 months.
