Tasting note
A hectare of land bordered by nature itself, on which the Cabernet Franc grape variety is grown. At the center of this magical vineyard is a centuries-old oak tree. We are located in Bolgheri, not far from the hills of the Donoratico district, at 120 meters above sea level: The red, sandy soil of the nearby coast leaves its place to a clayey, calcareous soil, which is characterized by the typical stone-rich skeleton of the alluvial area. There are no obstacles to the sun here, it illuminates the vineyard all day long and ensures perfect ripening of the grapes according to exposure-dependent microclimates: the grapes of the morning with exposure to the northeast are fresh and impetuous, the grapes of the afternoon with exposure to the south, fine and fragrant those of the evening with exposure to the West. In the glass, the wine is deep, complex red. Aromas of blackcurrants, sage, rosemary and sweet Brazilian tobacco. Full-bodied drink, very linear and fine-grained tannin with great intensity and power. What purity and length. It still takes about two to three years to fully open. Further storage is recommended and will be rewarded!!
Culinary recommendation
Our recommendation: The perfect drinking temperature for red wine is a slightly chilled 16°-18°C. Flaschenpöstler tip: Ventaglio goes perfectly with ribeye steak, red meat and pizza with mushrooms.
Vinification
The grapes, harvested by hand and picked on two sorting tables, come from the best locations in the Ventaglio vineyard, which is located 120 m above sea level. As a result of gravity, the whole berries fall into two small truncated cones made of French oak wood. During maceration, the mash is alternately rolled and knocked by hand for 25 days at a controlled temperature of 28/30°C. Some of the wine is then transferred into new French and Austrian oak barrels and tonneaux, in which the malolactic fermentation is completed. The aging takes place in oak wood and then, before sale, in the bottle.
