Tasting note
Dense ruby, large core, with slight whitening at the edge. Aged in the nose. Fruity, warmly spicy. Medium intensity. Ripe blackberries, dried fruits, dried flowers, some cinnamon. cloves. Hot spices. Nice nose sweetener. Dry on the palate. Compact, spicy-fruity. Medium body. Well-integrated acid, ripe tannins of good quality. Ripe blackberries, plums, warm spices. Balanced, medium finish.
Vinification
The grapes are carefully destemmed and macerated for ten days. Pressing is followed by fermentation, temperature-controlled in steel tanks. The young wine then rests in steel and cement tanks until February. In February, the pomaces of the recently fermented Recioto and Amarone are added to the wine. The second fermentation takes place, making the ripasso a bit stronger, more complex and more voluminous. The wine is then aged in large oak barrels for twelve months.
