About the wine

The Ripasso is the wine of the Veronese rural tradition and is obtained by an ancient oenological process, the winemaking process known as “Ripasso”. This technique includes around the young Valpolicella on the skins of the end of the fermentation of the Recioto. The wine is warm and ripe. The Ripasso restores the characteristics of Valpolicella freshness and drinkability, but also the richer, more concentrated feelings of chocolate and black chocolate and black cherry, which can be attributed to the dried grapes.

Tasting note
Intense purple color. On the nose, appealing aromas of plums, cherries and black berries, plus spicy notes and chocolate. On the palate, it is full, soft, with a fine fruitiness and licorice notes. A full-bodied and slightly spicy finish.
Culinary recommendation
Goes well with hearty starters, salumi, a very good choice with spicy, oriental dishes such as tagine.
Vinification
Chicken harvest at the end of September, fermentation for approx. 3 weeks at a controlled temperature of 18 - 20°C. The second fermentation, “Ripasso”, takes place in March, on the skins of Recioto and Amarone. The second fermentation takes about a week at a controlled temperature of 15 and 18°C. Aging in Slovenian oak barrels.
