Tasting note
Ruby red color. Intense on the nose, with aromas of pepper, leather, cherry and plum jam, licorice and ginger. Cherry and plum jam, licorice and ginger, well-structured on the palate, powerful, harmonious.
Culinary recommendation
For meat dishes and seasoned cheeses.
Vinification
Squeezing and destemming the grapes immediately after harvesting. The fermentation takes place with good maceration and pumping, decanting and decanting at least twice a day until the secondary fermentation takes place on the Amarone pomace in January (Ripasso). The wine is characterized by color, structure and alcohol.
