About the wine
Al-Cantàra was born in 2005. Right from the start, the winery has made a name for itself nationally and internationally, thanks to the extremely high quality of its wines. This was the first winery on Etna in terms of the number of important awards. Another distinguishing feature of Al-Cantàra's products is the sophisticated and modern packaging, whose distinctive labels are decorated by young Sicilian artists, most recently by Annachiara Di Pietro, with evocative representations that highlight the traditions, culture and area of Etna. Tasting note
Ruby red color. Aromas of camphor, wild herbs, red berries and a touch of smoky flint. The bright, linear and elegantly structured palate reflects the nose and is characterized by juicy raspberries, blood oranges and star anise before ending in a spicy mineral note. Firm, fine-grained tannins and pale acidity provide supple support.
Culinary recommendation
Goes well with fried red meat, game and aged cheeses.
Vinification
The crushed grapes are collected in stainless steel tanks, where fermentation takes place in the presence of the pomace at a temperature of 26-28 °C. The wine is then filled into chestnut wood barrels, where malolactic fermentation takes place. In the barrels, the wine remains on the noble yeast for 12 months. After an additional year of aging in steel barrels, the wine is refined in the bottle for another 12 months.
