About the wine
Ancestral Troy — free from prejudices, both linguistically and stylistically. An homage to the thousand-year-old city of Troia, nestled in the Daunia mountains, and to the spirit of the ancestors, which is reflected in the authentic character of this special wine. Each year with a new label, an artist interprets it according to his own feelings. This year Fonsy Nils said it this way.

Culinary recommendation
Goes well with appetizers, fish tartare, smoked fish, savory pies
Vinification
Hand-picked in boxes at the end of August, pressing the whole grapes and extracting the must, spontaneous fermentation. Cooling the wine before sugar is exhausted and fully aged on the lees in winter. Direct bottling on the third new moon of the year after harvest without dosage. Foam formation with spontaneous depletion of grape sugar preserved by the winter cold.
