Tasting note
Slate and rock in the subsoil, combined with a relatively protected, southwestern orientation and a resulting extremely long warm period of a single day, are decisive for the individuality of the Trittenheimer Apotheke location. Up to 80-year-old vines with deep roots in the rock produce small grapes and berries with concentrated aromas. As a result of the extension of the heat released by shale, the acid in the vines can be easily metabolized and broken down. The result is fine acidity and spicy-rich minerality with a soft texture. Different styles are achieved through different reading times: The Spätlese pharmacy is read at a later, more mature time than the pharmacy cabinet. This creates a style that is primarily characterized by the taste of ripe fruit, but without lacking strong acidity and minerality as an antithesis to fruit sweetness. The result is a balanced balance of sweetness and acidity. Wines of this style were traditionally served with food after about 10 years of aging.
Culinary recommendation
Our recommendation: The ideal drinking temperature for the white wine is slightly chilled 6°-8°C. The wine should be enjoyed during this period: Now - 2024. Recommended by Flaschenpöstlern: Goes well with duck, Asian food and mushrooms.
Vinification
The grapes are picked by hand and gently pressed. Spontaneous fermentation in classic Mosel wooden barrels (fuder barrel). The wine is then left on the lees until May.
