Tasting note
The Vigna TOREN Cabernet Sauvignon Riserva SECUNDO presents itself as the little brother of the single Vigna TOREN Cabernet Sauvignon Riserva vineyard. The development of this independent interpretation is due to the climate challenges of the 2021 vintage. It impresses with its filigree and represents the elegance and expressiveness of this grape variety in authentic form. The wine is dark garnet red and develops vegetable aromas of tobacco and red and black forest fruits on the nose. On the palate, spiciness, soft tannins and fine acidity testify to harmony and aging over several years. A long finish with lively freshness underlines its complexity.
Culinary recommendation
It goes well with game dishes, steaks, roast beef and aged cheese. Its strong structure and balanced acidity make it an ideal companion for hearty dishes
Vinification
After harvesting, the grapes are carefully destemmed and removed from green parts. The alcoholic fermentation takes place during the three-week maceration period. Biological acid degradation takes place during storage in barrique barrels for one year. After the wine remains in the tank for clarification for another six months, the wine is bottled for a further two years of aging.
