About the wine
We have a special, provocative sparkling wine for you that will inspire many wine connoisseurs. Fertile and beautiful landscapes of the coastal region give us these grapes, from which the winemaker from the South African winery Tokara conjures up this sparkling wine with refinement and experience. Tasting note
The wine has an impressive straw-yellow color with a bright green edge. This wine has a straw yellow color with a bright green edge. On the nose, the wine opens with crunchy green apples and linden blossoms. This results in a complex blend of lemongrass, petrichor and subtle black currant leaves. The palate is lively and focused with the saltiness of oyster shells.
Culinary recommendation
Perfect aperitif wine or goes wonderfully with oysters, asparagus with hollandaise or grilled yellowtail mackerel with salsa verde.
Vinification
The grapes for this wine come from the highland farm in Elgin, they were destemmed, crushed and immediately cold pressed in our inert press. The pressed juice and the freewheeling juice were kept separate and settled overnight before the clean juice was removed. For the Reserve Collection Sauvignon Blanc, only freewheel juice from the best blocks is used and fermented at 15 degrees Celsius in stainless steel tanks with selected wine yeasts. 12% of this blend consists of wine that is fermented in old, large-format barrels and aged there for five months. After fermentation, the wine was sulfurized and sat on the yeast for five months with regular stirring of the yeast before it was stabilized, filtered and bottled. 55,530 bottles were produced.
