Tasting note
Seductive nose with notes of roses, sweet strawberries, ripe cherry and cedarwood. The palate is medium-strong with lots of fruit, ripe strawberries, red cherries and violets, supported by well-integrated oak. Now to enjoy
Culinary recommendation
Great with a classic roast lamb or oxtail ravioli.
Vinification
Each component was harvested separately, destemmed, and mashed in the tank. The wines spent between 6 and 21 days on the skins, depending on the tannin structure. Pumping three or four times per day during fermentation. The wine is then pressed to carry out malolactic fermentation in the tank. The wine was transferred to French oak barrels, 18% new barrels, 25% second use, 17% third use and 40% older oak barrels, for a period of 12 months.
