Tasting note
Chardonnay dominates and its varietal aromas can develop freely. Some of it fermented in old barrels gives it good stature. Firm acidity, yet very accessible. Extremely complex, from apple peel to ripe Comté cheese. Very clear minerality, dense and long. If you can wait it out, you should store it for a few years.
Culinary recommendation
Ideal as an aperitif or with light appetizers such as oysters, ceviche or fresh cheese platters. It is also an excellent accompaniment to grilled vegetables and fish dishes.

Over 4 years of bottle fermentation. 6g/l residual sugar.
