Jewel Box is inspired by our ethos of African synergy, which combines ancient European heritage and knowledge with our modern African environment and culture. The sheer splendor of the stars that gaze on countless camping expeditions in southern Africa has left a wonderful, indelible memory. Getting up in an almost trance-like state and watching the regular bursts of shooting stars, the infinite traffic of satellites, and the slow shifting of constellations over time is truly incredible. To complete our trio, the goal was to create an MCC with the Jewel Box with an emphasis on wealth, opulence and complexity. The inspiration for this style should be two of my absolute favorite champagnes, namely Krug and Bollinger. The grapes were harvested by hand and the whole grape was gently pressed to obtain a maximum of only 550 liters per ton. The fermentation of Chardonnay was divided between stainless steel barrels and old French oak, while Pinot Noir was only fermented in stainless steel barrels. This creates the basis for complex building blocks, which are decisive for the final assembly. Another technique of using a reserve portion of Chardonnay that has spent 12 months in old French barrels also adds a very interesting blending component. The final blend consists of 70% Chardonnay and 30% Pinot Noir. The wine spends at least 48 months on the lees to develop optimal complexity.
