Tasting note
With grapes from the three Grand Cru communities of Chouilly, Cramant and Oiry. The basis is 68% of the 2020 vintage, complemented by reserve wines from 2015-2019, aged purely in steel tanks. Aging in the bottle for around 20 months before “dégorgement”. Complex nose with aromas of oranges, limes, lemon zest and fresh apricots, plus notes of blooming meadow herbs and a mineral-iodic chalk touch. Wonderfully clear and precise on the palate, finely citrusy with subtle saltiness on the finish.
Culinary recommendation
Goes well with lemongrass soup with shrimp skewer, Zuger whitefish, avocado smoked eel roll or even goat cream cheese in ash.
