Tasting note
Beautifully captures the essence of the holiday season, with aromas of blackberries, forest soil, pine, graphite and a touch of toasted oak On the palate, there are aromas of dried cranberries, spices and wet stone, leading to a finish that has rustic and earthy nuances.
Culinary recommendation
Goes well with red meat, reduced sauces and BBQ.
Vinification
Drained and fermented in a combination of new and neutral French oak barrels and closed fermentation containers. The barrels were pumped around three to five times a day for 10 days. The closed fermentation containers were pumped around two to three times a day for an average of 14 days. It was aged for 18 months in French oak barrels, 40% of which were new.
