Tasting note
Dark purple. Very rich already on the nose. With aromas of dried fruit, blackberry jam. Wrapped in subtle spicy and tobacco notes. Compact on the palate, with spicy-sweet extract, lots of finesse and depth. Persistent, with gently embedded woody aromas on the aftertaste.
Culinary recommendation
Goes well with lamb on herb crust.
Vinification
In order to achieve the best possible degree of ripeness of each variety, the grapes are harvested separately, fermented partly in steel tanks and partly in wooden barrels and then aged for around 22 months in French barriques (Allier, Never, Tronçais, 30% new). This is twelve months separately by grape variety and a further ten months as a blend of all grape varieties.
