Tasting note
On the nose, the wine shows a dense, dark focus of crushed blueberries and white pepper. Violets and fragrant blueberries invigorate a dense yet bright palate with textured fruit and soft tannins.
Culinary recommendation
A great accompaniment to slow-braised pork chops or roast rack of lamb with parmesan puree and crunchy garden vegetables.
Vinification
Harvested from a 34-year-old Shiraz block planted on clay soils in Bottelary. A small dried patch in this vineyard was replanted every year because the vines died off, but to no avail - the last lone survivors in the murderous clay soil were now harvested through a separate harvest, which yielded low yields with an intense blueberry scent. The grapes are harvested between 24° and 25° Oechsle. 58% of the grapes are fermented as whole grapes, the rest is pressed into open tanks, where they come into contact with the skin for 6 days and are pressed manually. A gentle basket press with 17% fresh stems allows the dense, dark aromas to be gently extracted before 12 months of barrel aging in older 500l French oak barrels. Minimal interventions allow the grape to truly express itself.
