About the wine

Pierre-Luc Leyvraz cuts his vines as you cut precious old bonsai trees. This pictorial commentary by a journalist who visited Pierre-Luc in his vineyards summarizes in one sentence how Leyvraz understands the profession of winemaker. His soul is deeply connected to the earth in Lavaux. He dedicates all his care to the artisanal care of his winery, which consists of an entire mosaic of plots on steep slopes. The age of the vines, the plant density, the short cut of the vines, the regulation of harvest quantities and countless other parameters, some of which seem insignificant, must be combined and mastered if you want to produce grapes of the highest quality. Pierre-Luc Leyvraz is passionate about putting St. Saphorin's exceptional troir in the right light and creating crus that lives up to their reputation. The winery is cultivated according to the principles of Integrated Production (IP). The domain comprises 3.3 ha, divided into 10 plots, each located a few hundred meters apart. The plots belong to the area that has been classified as a World Heritage Site by UNESCO.

Tasting note
The Gamay, which is combined here with a larger proportion of Pinot Noir, results in a stylish wine of great finesse thanks to its freshness.
Culinary recommendation
Goes well with fried duck or chicken with herbs as well as light meat dishes such as veal medallions or pork tenderloin and also goes well with soft cheeses such as brie or camembert as well as vegetarian dishes such as mushroom risotto or grilled vegetables.
Vinification
The grapes come from steep terraced areas that are a UNESCO World Heritage Site. Pierre-Luc Leyvraz cultivates his 3.3 hectare plots with great care and in accordance with the principles of integrated production. The vines are cut short to regulate harvest volumes and maximize the quality of the grapes. The vinification is traditional, with a focus on maintaining the freshness and fruitiness of the wine.
