Tasting note
It is pale, straw-yellow with greenish reflections, lively and with fine, persistent perlage. On the nose, it reveals the full range of aromas of Moscato, with intense, sweet floral notes and a hint of pastry. On the palate, it is soft, fresh and light. The distinctive acidity guarantees freshness.
Culinary recommendation
Goes well with sweet desserts, in particular the traditional pastries of the Christmas and Easter season - panettone and colomba. Ideal in combination with dry biscuits. Particularly suitable for fresh fruit and fruit salad.
Vinification
Gentle pressing and addition of selected yeasts. First fermentation and sparkling take place directly in a pressure tank in order to control all phases of sparkling wine production in a single fermentation process. Fermentation is stopped by lowering the temperature to preserve the natural sweetness of the grapes. The wine ages on lees for about a month without malolactic fermentation in an autoclave.
