About the wine
Valtellina is the largest terraced mountain wine-growing region in Italy. The native variety cultivated is Nebbiolo, locally known as Chiavennasca. The vine is cultivated at an altitude of between 350 and 900 m above sea level. Sandro Fay is very small and produces outstanding filigree, classic and complex wines, which impressively reflect the special altitude and the unique silty, sandy terroir around the town of Valgella. The “Sotcastèl” wine expresses the minerality and freshness typical of the Alpine region.

Tasting note
Bright straw yellow color. Nose: notes of apple, mango, papaya and grapefruit. On the palate: a distinctive freshness combined with an equally strong taste. At the end, a whiff of citrus and herbs.
Culinary recommendation
Excellent with medium-strength fish dishes, medium-aged cheese and sushi.
Vinification
Alcoholic fermentation in steel tanks at controlled temperature with cold maceration for 24 hours, aging in oak tonneaux for 6 months.
