The Shiraz (53%) and Viognier (2%) grapes were carbonated together with 20% carbonated grapes to refresh the wine and give it additional spice and fragrance. The Mourvèdre (45%) was picked very ripe so that soft, round tannins could be extracted in stainless steel during fermentation. After fermentation, the two components were filled into the second and third French oak trees for natural malolactic fermentation and maturation, where the wine spent 26 months before light filtration and bottling. TASTING NOTES Fresh spices and white pepper on the nose with intense dark berries. The palate shows dense, savory aromas in contrast to bright acidity before the powerful finish. The wine contains multiple layers of texture with a nice balance between richness, chunky tannins and lively freshness. A wonderful combination with slow-cooked winter dishes such as beef bourguignon or pulled pork.
