About the wine

Tasting note
Dark, dense color. On the nose, aromas of ripe dark berries, plum and cherry, accompanied by spicy notes such as black pepper, cedarwood and a touch of cocoa. Full-bodied and structured on the palate, with present but well-integrated tannins. The fruit appears concentrated, complemented by earthy and slightly smoky nuances. Long, spicy aftertaste.
Culinary recommendation
Ideal with beef, lamb, game or mature hard cheese.
Vinification
The grapes were harvested by hand in 18 kg stollen boxes and manually sorted according to consistency, ripeness and removal of leaves from the grapes. The derived grapes were fermented in 600-liter stainless steel tanks with daily reassembly and removal. The wine consists almost exclusively of free-running juice, with hand pressing gently resulting in a small amount of less than 5% of the total volume. After bottling, the wine was aged for 24 months in 225 liter French oak barrels. The wine was bottled without fining or filtration. Some natural sedimentation may occur in the bottle.
