Tasting note
Attractive, complex bouquet with notes of graphite, cinnamon, smoke, bacon and blackberries. Medium-bodied, elegant style, with juicy acidity and a fine tannin backbone. Long finish with raspberries and flint.
Culinary recommendation
This Syrah Viognier, with its rich, fruity style, is a versatile partner to food, as the structure and spiciness of the Syrah red wine and the floral nuances of the Viognier allow it to accompany beef, game and cured meats, aromatic curries, wild birds such as quail and duck, and reduced fruit aromas.
Vinification
The Elim vineyards grow on duplex soils with a high proportion of coffee stone, the Walker Bay vineyards grow on flat slate, and the Franschhoek vineyards grow on deep, sandy, decomposed sandstone and granite. Cool conditions in the Elim area resulted in a naturally low yield of around 5 tons/ha. The vineyards in Walker Bay also yielded low yields due to dry, windy conditions and flat slate soils. The Franschhoek Viognier was selected for its late maturity and harvested together with the Shiraz to ferment it. The grapes from the various Shiraz vineyards were harvested at different times. The Viognier grapes were placed in some of the tanks. The grapes were sorted by hand and then fermented without stalks. Regular pumping was carried out during fermentation at around 25 degrees Celsius. After maceration for about 15 days, the free run wine and the pressed wine were filled together in 300-liter barrels and matured for 14 months. 55% of the barrels were new. A blending took place and the wine was returned to the barrels for another 4 months before being bottled in November 2019.
