Tasting note
Ripe, nutty, slightly woody scent of ripe red berries. Roasted and dried floral notes as well as certain minerals and dried root vegetables in the background. Ripe, partly dried fruit with smoky, roasted wood notes, soup herbs, earthy tones and a little licorice. Lively acidity, firm, slightly drying tannin. Slightly rustic.
Culinary recommendation
Goes well with tasty noodles, pot roast, game and spicy, fully ripe cheese.
Vinification
The grapes are lightly pressed and destemmed, resulting in a clear must that ferments in steel tanks at a controlled temperature of 26-28°C; maceration takes 18-20 days. Immediately after tapping, the wine is transferred to Allier barriques, where it ages for 24 months.
