Tasting note
Selvoso means wooded, as the winery is surrounded by forests. The Selvoso has a sparkling ruby red color with slightly purple reflections. On the nose, strong aromas of ripe wild berries, sour cherries, aromatic herbs, floral notes and light notes of sandalwood inspire. On the palate, it is silky and full-bodied with lots of berry and cherry fruit, velvety tannins and an animating acid structure. The finish is lively and long-lasting with noticeable minerality. A top wine from the hills of Maremma.
Culinary recommendation
With Italian specialities, hearty meat dishes such as Bistecca Fiorentina, game, beef and lamb.
Vinification
The grapes for the Selvoso grow 400 meters above sea level on a steep south-east slope. After careful handpicking, a separate cool fermentation takes place with the natural yeasts in stainless steel tanks. Malolactic fermentation is then also carried out in steel tanks before the wines are transferred to wooden barrels. The Ciliegolo is aged in French barriques for 14 months and the Sangiovese in 500 liters of tonneaux. Around 40% virgin wood is used. The assemblage is then carried out. The wine is bottled unembellished and unfiltered and then aged in the bottle for a further 12 months.
