About the wine

Ökonomierat Rebholz - a very big name in German wine, whose reputation is not based on adapting to fashions or colorful labels, but in the consistent implementation of a philosophy: wine in a natural way, certified organic, biodynamic, the unvarnished representation of terroir and vintage. Rebholz has maintained what are almost mandatory terms in every wine letter for generations. Even today, Hansjörg Rebholz, together with his wife Birgit and his children Hans, Valentin and Helene, vinifies their 26ha of character wines, which illuminate and delightfully reflect the different terroirs. Tasting note
Enthusiasm - Despite present, fresh butter croissant notes and an oriental-looking spiciness, shows the extraordinary quality of the base wine almost unrealistically through aromas of fresh, ripe stone fruit, apricot, yellow apple and pear, and delights with the wonderful freshness of grapefruit zest and stimulating saltiness, the perlage is creamy and fine. Be careful! Hobby factor to the power of ten.
Vinification
Selective reading by hand. Whole grape pressing, only the first juice is used for sparkling wine, fermentation and aging of the base wine takes place in used wooden barrels, stored on the yeast for around 3 years after the second fermentation in the bottle.
