Tasting note
Savagnin, you might think of the Jura or Valais, but not the Palatinate, but it's true that we have a Palatinate. Jonas fell in love with the elegant yet powerful wines from the Jura early on. After an internship in the region, it was clear to him that it must also be Savagnin. In 2022, we now have the first wine in the glass that was aged to 1/3 classically under floor yeast and then lay on full yeast in large wooden barrels for a long time. The result is a very unique wine that reflects the classic aromas of the grape variety, but with a Palatinate twist.
Vinification
1/3 of the grapes for a short time under floor yeast, then aged in large wooden barrels.
