About the wine
This fresh, fruity Sauvignon Blanc combines aromas from four terroirs: The Hérault plain provides fruit and roundness, the Gard and Aude valleys bring complexity, while the cool East Aude region provides freshness. The grapes harvested early in the morning go through a short maceration period before pressing, followed by fermentation in stainless steel tanks. The wine is then aged on fine lees for a few months, without malolactic fermentation, to preserve its lively freshness.

Tasting note
Light yellow in color, this wine is fruity and fresh with aromas of passion fruit, fine citrus notes and a hint of flowers. Very aromatic, with a round and harmonious finish.
Culinary recommendation
It is ideal with seafood, grilled fish and light appetizers such as goat cheese or salads. It also goes perfectly with Asian dishes with lemongrass or sushi. A versatile companion for fresh, aromatic dishes!
Vinification
For vinification, the grapes are harvested early in the morning. After a short maceration period, pressing takes place, followed by alcoholic fermentation in stainless steel tanks. The wine then ages on the fine lees for a few months to develop more structure and depth. Biological acid degradation is deliberately avoided in order to preserve the lively freshness of the wine.
