Tasting note
The intensely structured palate is rich in tropical fruit aromas, supported by a base of the grassy, green pepper aromas for which Sauvignon Blanc is so known. Subtle oak notes round off the wine's long aftertaste.
Culinary recommendation
Feel free to serve Kleine Zalze Family Reserve Sauvignon Blanc pure to your guests, the complex taste requires no assistance. South African white wine goes particularly well with poultry dishes and white fish.
Vinification
The grapes were harvested early in the morning and in some cases even during the night. We treat Sauvignon Blanc very reductively from the start, from dry ice in the vineyard to the fermentation tank. 90% is fermented in barrels and ripen for a further 9 months before assemblage. The portion fermented in barrels is also made exclusively from grapes, which are pressed as whole grapes and are not crushed and destemmed in the traditional way. 5% of the remaining 10% consist of concrete containers and 5% stainless steel tanks, which are also aged on coarse yeast for 9 months before they are cut. A small portion of the wine is aged in a small portion of the grapes from concrete containers and stainless steel tanks, which are also aged on coarse yeast for 9 months before being blended. The remaining 10% consists of 5% concrete eggs and 5% stainless steel tanks, also aged on coarse yeast for 9 months before blending. A small portion of the wine in the barrel was also subjected to malolactic fermentation. There is no fining before bottling, and the only filtration is rough filtration at the bottling plant.
