Tasting note
Golden color. Full body. A complex bouquet of dried nuts, honey, herbs, tea, vanilla and toast. Rich aromas of ripe citrus, sweet spices and cedarwood. Well-defined structure, lively acidity and a touch of saltiness contribute to a long finish. Long aging potential.
Culinary recommendation
It goes well with grilled fish, crustaceans such as lobster or crawfish, as well as with poultry in creamy sauces. It also shows its full elegance with risotto with saffron or mushrooms, ripe goat cheese or a vegetarian pasta dish with truffles. Its salty freshness and richness make it the ideal partner for aromatic-intensive dishes.
Vinification
Classic white wine pressing for this old local variety. Ageing: 12 months in 225 lt medium-sized French oak Nbarrels. Further aging for 12 months in bottle.
