Tasting note
Expressive on the nose with intense notes of citrus, white peach, gooseberry and floral nuances, underscored by a distinctive minerality and flint note (silex) — typical of the barren soils of the Sancerre region. Accurate, lively and elegant on the palate with a fine acid structure, crystal-clear fruit and a long, mineral-rich finish. A characterful Sauvignon Blanc with depth and terroir expression.
Culinary recommendation
Perfect with seafood, oysters, goat cheese (such as crottin de Chavignol), fish carpaccio, asparagus dishes or Asian-inspired dishes with lime, coriander or ginger. Also ideal as a fine aperitif.
Vinification
Selective manual harvesting, temperature-controlled fermentation in stainless steel tanks to preserve freshness and primary aromas. Aging on fine yeast to give the wine additional structure, complexity and a fine mouthfeel — completely without the use of wood, to bring out the mineral Silex character of the terroir in an unadulterated way.
