About the wine
Sébastien was just 21 years old when he left his job in a Parisian wine shop in 2002 to prevent the sale of his parents' winery in Sury-en-Vasux. As early as 2003, the conversion to biodynamic viticulture took place, even the use of copper was dispensed with, machines anyway, the processing is carried out with horses. The vineyards are like natural oases, what a diversity, no sign of monoculture. An extremely late harvest with Botrytis, lots of time in the cellar, time instead of chemical assistants, a wheel-cold approach, but the wines are anything but radical, they radiate an inner warmth and peace, a gentleness, a grandeur that you would otherwise not find in Sancerre, very big, and far away from the steely, crisp and grassy Sancerre! A revelation!
