About the wine

Tasting note
Sparkling straw yellow Delicate on the nose with notes of apples, pears, some pineapple and a touch of fresh hay. Juicy and fresh on the palate, ripe yellow fruit and subtle exotic notes, wonderful acidity and a fairly long finish.
Culinary recommendation
Great with grilled fish and seafood as well as antipasti of all kinds.
Vinification
After harvesting, the grapes are immediately brought to the cellar and fermented in stainless steel tanks, separated by grape type. In order to obtain additional aromas and extract, some of the crushed grapes are stored at a cool 10° Celsius for six hours before fermentation. After fermentation is complete, the young wine matures on its own yeast for one month, still separated by variety, and thus gains in elegance, structure and minerality. After filtration, the varietal wines are assembled and bottled.
