Tasting note
In a clear, pale yellow shade with subtle green reflections. The bouquet is characterized by juicy peaches, fresh apples and citrus fruits combined with floral nuances and a fine mineral note. On the palate, it is powerful and structured, with a successful balance of mature fullness, lively freshness and crisp acidity. The mineral character stretches elegantly into the long finish and gives the wine additional depth and expressiveness.
Vinification
The hand-picked grapes are gently pressed and the must is clarified after 12 hours of rest. Fermentation takes place with wild yeasts in temperature-controlled stainless steel tanks. Batonnage on the yeast gives the wine more richness and terroir aromas. Malolactic fermentation is decided depending on the vintage. Each plot is vinified separately and combined after tasting. If necessary, a slight filtration is carried out.
