Tasting note
Straw yellow with greenish reflections, grapefruit dominates the expressive nose, along with notes of apricot, yellow peach and melon, rounded off by a floral lavender facet. Sounds distinctly fresh on the palate, irresistibly tasty on the finish.
Culinary recommendation
Goes well with salmon antipasto or even a racy coconut fish curry.
Vinification
High temperatures and low amounts of precipitation characterize the 2022 vintage; optimal day-night fluctuations and cooling sea breezes preserve the aromatic freshness of Fiano. The harvest at Masseria Maìme takes place in mid-September, after gentle pressing, the must is cooled to 10 degrees for around 24 hours. Fermentation in stainless steel takes place at a slightly elevated temperature (16 degrees) and the fiano matures on the lees for 4 months before bottling.
