Tasting note
Intense and lively red color, fresh red fruits, spices and cherries on the nose. Dense and elegant on the palate with a fruity and characterful aftertaste.
Culinary recommendation
Goes well with pasta with game ragout, ossobuco, grilled beef, pecorino toscano or mushroom dishes.
Vinification
After manual harvesting, the selected grapes are destemmed and fermented with natural yeasts at a controlled temperature for approx. 18 days. The pomace hat is regularly wetted from above so that it does not dry out. It is then gently pressed and the wine matures for about 12 months in large and small, used barrels. During this time, biological acid degradation takes place.
