About the wine
The Càntele family founded the company in 1979. With constant quality research, the family has gained an important position for the company among the wineries and wineries of Salento and has been able to assert itself permanently on the foreign markets. The company's philosophy is to produce the best grapes in order to meet its own ambitious goals.
Tasting note
Dunkles Rubinrot mit violetten Reflexen. Ein Duftbouquet aus roten Früchten, Johannisbeere und Pflaume. Thymian und Feuerstein im Ausklang. Im Gaumen sehr ausgewogen. Weich und geschmeidig im Gehalt.
Culinary recommendation
Passt zu Pasta al Ragù, Geflügel und würzigen Speisen. Auch ein schöner Rosso zu Merenda mit Salami und mittelreifem Käse.
Vinification
Nach dem Pressen und Entrappen bleibt der Most mit einer Maischestandzeit von circa 6-8 Tagen in Kontakt mit den Schalen. Die Gärtemperatur bleibt konstant bei 22-24°C. Nach Beendigung der Gärung reift der Rotwein einige Monate in französischer und amerikanischer Eiche.
