About the wine
The roots of Cantina il Cavaliere (The Knight) go back to 1895. Today, the company is run by Roberto and his wife Tiziana Belossi. A modern winery and the necessary expertise from the team of oenologists create wines of exceptional quality. The vines cover almost twelve hectares. More than 95,000 bottles are filled annually.

Tasting note
Harmonious and elegantly structured on the palate with a long and powerful finish. The aging in barriques accentuates the complexity of the wine and gives it roundness and mildness. As a young wine, it exudes intense scents of ripe fruit, a slight note of vanilla. As a mature wine, it develops more complex notes of sweet tobacco and licorice.
Culinary recommendation
Goes well with red meat, ragu and even recent alpine cheese.
Vinification
Manual harvest when the grapes are at optimal ripeness. Gently press and dry every 30 minutes in thermoregulated horizontal vinicators. The mash is then heated to 26°C to extract the color and start alcoholic fermentation. Several different cycles of processing the skins to soften the tannins. Processing the yeast to improve the roundness and complexity of the wine and to complete malolactic fermentation. Aging process of 16 months in barriques after transfer. Before bottling, the various barriques are optimally blended to create good structure, elegance, velvety and roundness with a light and soft wood note. Filling without stabilization and filtration, with the possibility of easy sentence formation.
