About the wine
North of Verona, in the village of Negrar, at one of the highest points in the Valpolicella zone (350 m above sea level), the Le Ragose winery overlooks rolling, green hills. In 1969, oenologists Arnaldo and Marta Galli bought the 70-hectare abandoned estate Le Ragose. They recognized that many excellent vineyards were being abandoned in favor of easier to cultivate plots on the plain. So they replanted Le Ragose's vineyards and began cultivating and pressing Amarone and Valpolicella in the most natural way possible.

Vinification
The Valpolicella classico pressed in September-October is fermented again in January for 15-20 days in Amarone mash using the Ripasso method. Amarone mash contains sugar and the secondary fermentation gets around 10% of Amarone juice, giving the wine more aromatic complexity while maintaining the lighter mouthfeel of Valpolicella. The presence of residual sugar in Amarone Valpolicella mash allows the typical properties of Amarone to be extracted: aromas of dried fruits, alcohol and structure.
