About the wine

Ripasso is a traditional process of re-fermenting young red wines on the mash of a higher quality wine in order to refine the wine. Ripasso is a specialty in Valpolicella. He is considered the little brother of Amarone. In Ripasso, the Valpolicella is fermented normally and then placed on the Amarone mash for a few weeks after the Amarone has been peeled off. Ripasso is more voluminous and has more sweet tannins combined with ripe fruit than normal Valpolicella. This process makes the structure, color and taste of Valpolicella more intense, similar to Amarone, without losing its unmistakable freshness.

Tasting note
Ruby red, ripe berry aromas with a little spice, smooth structure, soft and full-bodied body, pleasant aftertaste.
Culinary recommendation
Goes well with roast, grilled and pot cooked meats and aged cheese.
Vinification
The grapes are stripped and crushed. Fermentation takes place between 22° and 28°. This is followed by a maceration period of 12 days. The wine then remains in steel tanks until January. In the winter months, Amarone mash is added to this wine after pressing, followed by another light fermentation for 2-3 weeks. The result is called ripasso. The final aging takes place in large wooden barrels for at least 12 months.
